Diet Recipe: Watermelon And Shallots Salad for Watermelon Fast

I told you last week that I will be giving you simple recipes you can use with your watermelons. And today I will share with you a very simple one from my mother's recipe box.

The watermelon recipe is called Watermelon Salad with Shallots. First things first, if you do not know what is a shallot then I think I will have to tell you what it is. Shallots are a kind of onions, a red one, with relatively weaker flavor and aroma as compared to other more widely used variety of onions. In my country we call that as Sibuyas Tagalog, or localized onion.

My parents really like watermelons. In a city in my country called Tagaytay, my parents' parents own a small area were watermelons grow alongside pineapples. They have since then did a couple of recipes with watermelons including watermelon pies, cakes and salads.

For this recipe all you need to have is a

  • Watermelon (average size)
  • 2 bulbs of Shallots (or any type of onions will do if you please)
  • 1 cup Vinegar
  • Salt & Pepper (to taste)

What you have to do for this recipe is try to get yourself a good watermelon, not so old and not you young. The red flesh less the white part indicates that watermelons are in good age, and it must taste sweet of course. Chop the watermelon flesh to small squares or cubes, or in any size and shape that is easy to eat.

Next thing to do is to chop the onions to small cuts. In a bowl, mix the shallots and the vinegar. Put the watermelons and add salt & pepper to taste. Let it chill in the refrigerator for like 5-10 minutes. And voila! You have your very own Wtsermelon and Shallots Salad.

Since the watermelon is already sweet, it will compliment the sour and salty taste of the vinegar and the salt. This simple recipe is actually almost the same with a cucumber salad, we only use the watermelon as the main ingredient.

You can get the healthy nutrients that watermelons has and you also gain the anti-cholesterol compounds of onions. Its really a good and simple recipe so try it now!
